Pumpkin Spice Toddler Pancakes

My son LOVES his pancakes.  I usually make pancakes with a smashed banana, some flour, an egg, a bit of milk, and some vanilla.

I realized that I did not have bananas this morning and would need to improvise. I looked through what was left of the baby food in the pantry, and found apple/pumpkin/carrot puree. It looked like a good choice, so I went with it.

Originally, I was only going to use baby oatmeal as the "flour" in these, but the consistency wasn't right. I ended up adding 3 heaping teaspoons of flour.  They turned out to be really good, so I thought I'd share.



Pumpkin Spice Pancakes

1/2 c. Baby oatmeal
1 package baby food (I used apple/pumpkin/carrot)
1 tsp. Cinnamon
1 tsp. Vanilla
1/3 c. Milk
2 eggs
3 heaping tsp. flour


Mix all of your ingredients together.  Let some butter (or coconut oil) melt in the pan. Make those pancakes!
